These are two different things, and only one of them can be put right.
IF YOU DELETED THE GAME
If you were signed in, your progress is safe. Reinstall the game, open Profile, sign in with the same account, and choose your saved game.
If you were never signed in, the progress was only on the phone, and deleting the game deleted it with no copy kept.
IF YOU DELETED YOUR ACCOUNT FROM INSIDE THE GAME
That removes everything: your account on our side and everything stored on the phone. Your character resets and the game opens as if it were newly installed.
There is no partial version of this and no copy is kept. It cannot be undone, including by us.
WHAT TO DO NOW
Start again, and sign in straight away so the new progress is kept safe from the beginning.
